Fall Cow Share – Details

We will have our grassfed antibiotic and hormone free beef available again this fall. Those of you that purchased before thank you and the price is the same, it is $4 a lb hanging weight. They will be butchered Oct 3 and I will deliver to the gym 3 or 4 weeks later$50 dollar deposit for each share, to Vinny by Sept 20th. If any of you have chest freezer space and are interested in purchasing whole halves or qaurters of beef, you can get it custom cut and packed. Just contact me and I can go over the possible cuts with you.

We will also have pork available in Nov. They are antibiotic and hormone free, but fed grain. They too are $4 a lb hanging weight. That price includes the packing and smoking. Our butcher will smoke hams, make regular, pepper and cajon bacon, ground sausage, hot or sweet italian sausage links, kielbasa, and cut pork chops, pork roasts, ribs etc.

Those that haven’t purchased our beef previously, take home weight is roughly 3/4 of hanging weight. Shares run between $200 to $330 and will fit in a freezer section of normal fridge/freezer. You purchase a share and will receive a mix of the following cuts.
Steak
Chuck, ribeye, sirloin, filet, new york strip and london broil
Roasts
Bottom round, eye of round, sirloin tip and rump.
Ground beef in 1 lb packages
Burger patties
Stew meat
Minute steaks, sliced roasts for stir fry or cheese steaks.
And organ meat is available
Heart, tongue, kidney, oxtail, liver, suet and bones.
The beef is vacuum sealed, steaks and roasts are individually packed and labeled with cut and weight. It breaks down to roughly 40% ground meat, 40% steaks and 20% roasts/stew meat. So the best steaks are the same price as the ground meat.
Our butcher will split the beef into quarter shares and for orders with the gym we further split the quarters, into 1/8 or 1/12.  It is purchased by weight,  so you will give a $50 deposit, and when it goes to butcher I’ll contact you with weight and how much is owed on delivery, roughly 3 weeks later.
